Ingredients

12 chicken thighs, patted dry

1 cup all-purpose flour

Salt and pepper to taste

1 cup Italian seasoned bread crumbs

3 large eggs

½ cup vegetable oil

1 teaspoon paprika

(Optional: ½ teaspoon garlic powder or cayenne pepper)

Instructions

1. Preheat oven to 350°F (175°C). Grease a large baking dish with vegetable oil.

2. In a shallow dish, mix flour with salt and pepper.

3. In a second dish, beat the eggs until smooth.

4. In a third dish, add the Italian seasoned bread crumbs.

5. Coat each chicken thigh by dredging first in flour, then dipping in beaten eggs, and finally rolling in bread crumbs.

6. Arrange the coated chicken pieces evenly in the baking dish. Drizzle or brush with the remaining oil.

7. Sprinkle paprika over the top for flavor and color.

8. Bake for 30 minutes, flip each piece, then bake another 30 minutes until golden brown and crispy.

9. Remove from the oven and let rest for 5 minutes before serving.
